Post-harvest handling: where a good crop loses its price
A third of Indian fruit never reaches a buyer in saleable condition. Almost all of that loss happens in the first six hours after picking.
The work that decides what a fruit crop earns happens after it leaves the tree. A grower can do everything right for eleven months and lose a third of the value in the six hours between picking and the packhouse. Post-harvest handling is what happens in those six hours.
Post-harvest handling starts at picking
Maturity indices vary by crop, and picking on appearance alone is the commonest error. Mango is judged on specific gravity — mature fruit sinks in water — along with shoulder development past the stem end, on fruit from a canopy opened up for light. Citrus goes by the total soluble solids to acid ratio. Pomegranate by aril colour and the sound the fruit makes when tapped.
Harvest in the cool hours, early morning after dew has dried. Fruit picked at two in the afternoon carries field heat that must then be removed, and every hour it holds that heat is respiration burning through shelf life.
Use a clipper and leave a short stalk. Pulling the fruit tears the stem end and opens a route for rot. Mango latex burns the skin of adjacent fruit — de-sap by holding the fruit stem-down for twenty minutes before it goes into the crate.
Remove field heat before any other post-harvest handling
This is the single highest-value step available to most growers, and the most often skipped.
Fruit at 35°C respires roughly four times as fast as the same fruit at 20°C. Every hour it stays hot consumes shelf life that cannot be recovered later, no matter how good the cold storage at the other end.
- Room cooling — cheapest, slowest. Adequate if the shed is genuinely shaded and ventilated.
- Forced-air cooling — air pulled through stacked crates. Four to ten times faster than room cooling, and the best return per rupee for most fruit.
- Hydrocooling — chilled water, suits citrus and stone fruit, not mango.
Where none of these exist, at minimum: shade netting over the collection point, crates raised off hot ground, and movement to the packhouse within two hours.
Grade honestly, in one place
Grading is where price is made. Buyers pay for uniformity, and mixing grades drags the whole consignment down to the price of its worst fruit.
Sort on size, colour, blemish and firmness in one pass at a single station under good light. Remove anything with insect damage, sunburn, latex burn or a soft patch — one rotting fruit will infect a crate in transit.
A rejected grade is not waste. Second-grade fruit goes to processing, juice or local sale. What destroys a buyer relationship is a first-grade box with second-grade fruit in the middle layer.
Pack for the journey
Wooden crates are cheap, and their splinters and rough interiors cause a measurable share of transit damage. Corrugated fibreboard with ventilation on all four sides, moulded trays for high-value fruit and single-layer packing for anything soft repay their cost.
Stack so that air can move through the pallet. A tightly wrapped pallet with no ventilation path defeats the cold store it is sitting in.
Store at the crop’s own temperature

Tropical fruit suffers chilling injury below its threshold. Mango held at 5°C develops pitting and grey skin discolouration and never ripens properly. Colder is not safer.
Keep ethylene producers away from ethylene-sensitive crops. Ripening mango or banana in the same chamber as leafy vegetables will yellow the vegetables within days.
Ripen deliberately, not with carbide
Calcium carbide is banned, unsafe for the handler, and produces uneven ripening with poor colour. Ethylene gas at 100 ppm in a sealed chamber for 24–48 hours at 20–22°C gives uniform ripening, better colour and a fruit that holds. Ethephon dip is the intermediate option where a gas chamber is out of reach.
Cooling within two hours of picking is worth more than any input applied during the season.
